If you’re newly vegan, eating more plant-based meals, or a long-time vegan/ vegetarian looking for new recipes, you’ll want to check out this cookbook review. The author is a very popular vegan blogger and cookbook author, Angela Liddon.
The cookbook includes 100 recipes with beautiful photos and engaging recipe names. The recipes involving tofu and beans or lentils are particularly strong. My favourite recipe is the Curried Chickpea Salad. Other standouts include the Endurance Crackers made with all seeds, including chia and pumpkin seeds, Creamy Thai Carrot Sweet Potato soup, Golden French Lentil Stew, Vegan Cheese Sauce and Chewy Molasses Spelt Cookies.
Overall, the cookbook is a good one if you have your meal prep game on lock-down. Many of the recipes take overnight preparation. If that describes you, I highly recommend it.
