Vegan Meal Prep For Weight Loss – Week 9

In this vegan meal prep for weight loss episode I make a super easy mashed turnip/swede and a delicious jackfruit chickpea stew – yum! I also make a couple of other of my staples – risotto and red cabbage slaw.

Mashed Turnip/Swede

1/2 cup plant milk + more as needed
1 Tbsp white miso paste
1 tsp onion powder
1 slow roasted turnip, chopped

Jackfruit Chickpea Stew

1 onion, chopped
2 garlic cloves, sliced
A pinch of salt
2-3 sprigs of fresh thyme
1 bay leaf
1 large red pointed pepper, sliced thin
1 jalapeno or chilli, diced
1 1/2 Tbsp grated ginger
1/2 tsp dried oregano
1 tsp ground cumin
1 tsp onion powder
1/2 tsp garlic powder
1 Tbsp vegan chicken seasoning (optional)
3 Tbsp white wine vinegar (or 3/4 cup dry white wine)
2-3 cups vegetable stock
1 Tbsp white miso paste
1 can green jackfruit
1 1/2 cups chickpeas (or 1 can)
2 slow roasted carrots, sliced
1 Tbsp potato starch + 1 Tbsp water
